Southern Fried Skinnyfied Whole Grain Waffle Recipe

Ok, I’m a day off for National Day of the Waffle, but honestly who really knows about these days until the day of, when your social media news feed informs you what we need to be celebrating?

Sorry Facebook, you didn’t give me enough notice to get this recipe to you on the day, but shouldn’t waffles be celebrated every day? Here is my favorite jockey styled waffle recipe and why you should eat these waffles instead of the fattening cowboy styled waffles.

And yes, they are delicious!

Alternative Ingredients You Will Use:

  • Unsweetened almond milk (original or vanilla) is low in calories and has more calcium than milk. It’s dairy free and is only 30 calories per cup as compared to skim milk’s 90 calories per cup. Almond milk is made by blending almonds with water and then straining them.

  • Whole-wheat Pastry Flour works better in baked goods than whole-wheat flour. Whole-wheat pastry flour is milled from soft white wheat, whereas regular whole-wheat flour is milled from hard red wheat. The bran, germ, and endosperm are all intact. It has 16 grams of fiber per cup and 12 grams of protein per cup.

  • Flax seed meal contains all sorts of healthy components but owes its primary healthy reputation to three of them: Omega-3 essential fatty acids – “good” fats that have been shown to have heart-healthy effects (decrease risk of heart disease and diabetes), Lignan’s, which have both plant estrogen and antioxidant qualities (protects against cancers that are sensitive to hormones), and are high in fiber.

  • Wheat germ is tiny in size, but packed with nutrition. It offers a significant dose of vitamins, minerals, and protein. It is the part of the wheat that sprouts and grows into a new plant. Wheat germ is high in Vitamin E, magnesium, zinc, thiamin, folate, potassium, and phosphorus.

Whole Grain Waffles:

Ingredients:

  • 2 eggs, beaten

  • 1 3/4 cups almond milk + 1 T apple cider vinegar (this is a buttermilk substitute)

  • 1/2 cup unsweetened applesauce

  • 1 teaspoon vanilla extract

  • 1 1/4 cup whole wheat pastry flour

  • 1/2 cup flax seed meal

  • ¼ cup wheat germ

  • 4 teaspoons baking powder

  • 1 packet stevia

  • 1/4 teaspoon salt

Directions:

  1. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla.

  2. Beat in whole-wheat pastry flour, flax seed meal, wheat germ, baking powder, stevia and salt until batter is smooth.

  3. Preheat a waffle iron, and coat with cooking spray.

  4. Pour batter into waffle iron in batches, and cook until crisp and golden brown.
