Southern Fried Skinnyfied Appetizers

Black Bean Salsa

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • ½ red onion, diced
  • 1 garlic clove, minced
  • 1 sm. Bunch cilantro
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • juice from 2 limes
  • salt
  • pepper

Directions:

  1. Combine all ingredients in a large bowl and stir until combined

Cumin Chicken Salad

  • ½ cup 0% plain greek yogurt
  • 1 T cumin
  • 2 cups cooked chicken (rotisserie or cooked and shredded)
  • ½ cup red grapes halved
  • 3 T fresh cilantro
  • 1 T Dijon mustard
  • 1 minced jalapeno
  • salt and pepper to taste

Directions:

  1. Add add ingredients to a large bowl and mix until combined. Add more greek yogurt if it is too dry.

Bacon Wrapped Dates

  • 6 slices turkey bacon (or sub pork bacon)
  • 12 de-seeded dates

Directions:

  1. Preheat oven to 375
  2. Cut bacon in half
  3. Wrap ½ piece of bacon around date and secure with toothpick
  4. Bake at 375 until crispy, turning once, about 20 minutes

*Optional to stuff dates with cream cheese, almonds, etc!
