Morning Glory Muffins

Ingredients:

  • ½ cup mashed sweet potato
  • ½ cup shredded coconut
  • ½ cup raisins
  • ½ cup chopped walnuts
  • ¼ cup honey
  • 1/8 cup shredded carrots
  • 2 eggs
  • ¾ cup almond flour
  • 1 T cinnamon
  • 1 T vanilla
  • 1 T baking powder

>Directions:

Preheat oven to 350

  1. Combine all ingredients in large mixing bowl and blend well
  2. Coat muffin tin with non-stick cooking spray and divide among six cups
  3. Bake for 28-30 minutes until muffins are cooked all the way through
