Flat Belly Egg and Sweet Potato Breakfast Casserole

Ingredients

  • 4 eggs, whisked
  • 4 egg whites
  • 1/2 chorizo, cooked and broken into pieces
  • 1 sweet potato shredded
  • ½ yellow onion, diced
  • 2 T hot sauce
  • 1 tsp garlic powder
  • 1 tsp onion salt
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  1. Preheat oven to 375
  2. Cook Chorizo & onion in hot skillet until it begins to crumble
  3. Beat Eggs and egg whites in large howl
  4. Add meat, onion, and sweet potato to a bowl. Then add the rest of ingredients and mix well
  5. Grease a 9×9 dish and add egg mixture
  6. Cook for 25-30 minutes until eggs aren’t runny
