Fit Flapjacks

Ingredients

  • 1 cup whole wheat pastry flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 T honey
  • 2 T applesauce
  • 1 T coconut oil melted
  • 2 large eggs
  • 1 cup almond milk
  • 1 T vinegar or lemon juice
  • Blueberries

Directions:

  1. Mix the vinegar or lemon juice with the almond milk and let sit
  2. Mix dry ingredients
  3. Whisk wet ingredients
  4. For a well in dry ingredients and add wet ingredients to dry ingredients
  5. Mix until incorporated but do not over mix.
  6. Cook in sprayed skillet (or melt coconut oil) on medium heat about 3-5 minutes on one side until no more bubbles are forming. If using blueberries add them now before you flip. Flip and cook about a minute more until done
