Blueberry Lemon Muffins

Ingredients

  • 1 ¼ cup rolled oats
  • 1 cup whole wheat pastry flour
  • 1 T baking powder
  • ½ T salt
  • 1/3 cup honey or stevia
  • 1 container blueberry or plain greek yogurt
  • ½ cup milk of choice (vanilla unsweetened almond milk)
  • 1 T coconut oil
  • 1 egg
  • zest and juice of 2 lemons
  • 1 ½ cup blueberries

Directions:

  1. Preheat oven to 400
  2. Mix all dry ingredients together
  3. Lightly beat the egg with a fork and add wet ingredients together, minus the coconut milk
  4. Melt the coconut oil. Pour the wet ingredients into the dry ingredients. Add coconut oil
  5. If batter is too thick add more milk. Don’t over mix. Fold in blueberries
  6. Spray a muffin pan and bake for about 30-35 minutes
