Quick and Easy Summer Recipes

Well, it’s that time of year when the heat is out of control and weekly barbques take place (which usually require using your friends house with a pool).

When it comes to summer meals, the first thing that comes to mind are hamburgers, hot dogs and fruit salads. Sure, they are quick and simple to make, but why not switch it up!

Here are some of my favorite summer recipes that will put your basic barbecue meals to shame!

Panzanella Salad

Well, if you know me, you know I love Pioneer Woman recipes more than anything. Always simple, real and delicious. Ree hits it out of the park with this recipe. If you have a garden uncontrollably producing vegetables, this salad is perfect for you!

Dill Pickle Pasta Salad

Who doesn’t love pasta salad? This Spend with Pennies salad is beyond delicious and is an awesome change up from the plain ol’ pasta or mac salad.  Also another great way to use up your garden veggies. I substituted with light mayo and added extra pickle juice to make it a touch lighter. Give this one a try, you won’t be disappointed.

Chicken or Steak with Balsamic BBQ Sauce

It’s not a BBQ until you’ve got something cooking on the grill! I love BBQ chicken or steak and this has a fun twist with the simple homemade balsamic barbecue sauce. Super simple, and super delicious, Giada always knows the way to our hearts. This will be a hit for sure!

The Best Soft Chocolate Chip Cookies

If you haven’t heard of Sally’s Baking Addiction, you’re missing out! Hands down, the best chocolate chip cookie I have ever tasted. The secret? Cornstarch. That’s it!  Watch out, these puppies are addicting. You’ll find yourself eating two, three or maybe a dozen….

Pair with this easy No-Churn Vanilla Ice Cream for a delicious cool down treat.
